The association C.I.V.C. announces the date of the vintages.
No harvest may take place before this date. Basically, it is a question of finding the optimal balance, taking into account, among other things, the annual climatic factors, the behavior of the vines and the yield, in order to ultimately ensure optimal quality. Consequently, this timing varies from year to year. Generally, the date is in September, sometimes in August in the case of unusually early ripening, or at times in October in the case of very sluggish ripening development.
