Dégorgement

Shock freezing in an ice bath freezes the set in the neck of the bottle. The temporary cork is then removed and the phrase is ejected from the neck of the bottle as a small block of ice by the pressure in the bottle (dégorgement à la glace). The traditional way (rarely practiced today) to skillfully eject the sentence (without shock freezing) from the neck of the bottle is called dégorgement à la volée.
