The Champagne Producer Bruno Paillard was founded in 1981 in Reims. Its cuvée is N. P. U. (Nec Plus Ultra). Bruno Paillard Champagne is an independent champagne producer.
Bruno Paillard Champagne is not only the youngest champagne brand, but also the only one that is personally managed by the owner and namesake. At Champagne Bruno Paillard is actually Bruno Paillard personally responsible for quality and production.
The Paillard family itself has been in the champagne business since 1704. In 1975, the young Bruno also becomes a wine broker. He quickly dreams of making his own champagne. In 1981, he sells his old Jaguar, uses the money as start-up capital for his own small company, and dares to do something no one would have dared to think of: he opens his own champagne trading house. It is the first new trading house in over 100 years. Bruno Paillard is 27 years old. He riddles his first bottles in a rented shed. His qualities are so good that the English market discovers and celebrates them, Champagne Bruno Paillard grows and thrives. 1990 Bruno Paillard can inaugurate the current premises on Avenue de Champagne in Reims. With about 500,000 bottles of production per year, Champagne Bruno Paillard is one of the small trading houses in Champagne. But Monsieur Paillard's visionary approach sparked important impulses in Champagne. He vinifies his Grand Cru base wines in barriques as a matter of principle. He gives each terroir an individual profile depending on its location, soil and origin. Monsieur Paillard combines purity, minerality, finesse and quality to create an unmistakable character of origin, which he skillfully and sensitively blends into his very own house style. For this purpose, he uses only the first pressing, the "Première Cuvée", and his dosage consists of his own reserve wines.
Bruno Paillard Champagne is one of the dry "Brut" champagnes on the market. The care with which it is worked for the knowledgeable customer is impressive and sets standards. For example, Bruno Paillard was the first house in Champagne to declare each bottle not only according to the origin and composition of the cuvée, but also with the date of degorgement. For Monsieur Paillard this is of decisive importance: "Degorgement is the second birth of champagne. From this moment on, its natural aging process begins. Its aromas develop from fruit to flowers to spices; its colour becomes increasingly darker, its taste more complex. It is therefore important for the connoisseur to know when to disgorge it."
The house Bruno Paillard has 25 hectares of own vineyards. These provide a third of the grape demand, an exception in the Champagne region. Monsieur Paillard buys the rest from permanent contract winegrowers in more than 30 locations in Champagne. His own vineyards are cultivated in integrated cultivation, some hectares are already ecologically certified. The conversion of the entire production to organic cultivation is being planned. At Paillard, quality assurance is not a verbal phrase, but reality. Because many well-known champagne producers, in order to meet the increased demand, increasingly buy "sur latte", i.e. ready shaken bottles from winegrowers or other champagne houses, which are disgorged in the own house and trimmed to the in-house style by appropriate dosage, Bruno Paillard developed its own bottle form, which demonstrates to knowledgeable customers that it does not buy external bottles: "Sur latte" champagne is produced exclusively in the usual standard bottle. So Bruno Paillard's special bottle guarantees serious own development. Champagne Bruno Paillard is in many respects an extraordinary and visionary champagne house, to which we dedicate our commitment out of conviction.
