Bollinger Champagne
The Champagne Producer Bollinger was founded in 1829 in Aÿ. Its cuvée is the La Grande Année.
Bollinger is an independent champagne producer.
The house Bollinger is today one of the few remaining large champagne producers in private ownership. In the Champagne this is a rarity today. When, in the course of the champagne boom of the 90ies, the big houses enforced an extension of the area and shorter minimum storage times, Bollinger responded to these quality-reducing measures with an in-house ethics charter, the regulations of which are exemplary. Against the background of these quality criteria, the champagnes of the house Bollinger are considered as Grand Cru Classé wines of the region.
The 174 hectares of the house are planted with 85% of Grand Cru and Premier Cru vines, spread over seven main vineyards: Aÿ, Avenay, Tauxières, Louvois and Verzenay are planted with Pinot Noir, Cuis with Chardonnay and Champvoisy with Pinot Meunier. Bollinger is one of the few champagne houses that produce a large part of their own grapes for their blends. The Pinot Noir represents 60% of the house's vineyard, which is exactly the proportion of this demanding grape variety in the Special Cuvée. Complex and powerful, it gives Bollinger wines their remarkable structure. Another special feature of Bollinger are two plots of land, Clos Saint-Jacques and Chaudes Terres, which never succumbed to phylloxera, the disease that was introduced at the beginning of the 20th century. These ungrafted vines are entirely cultivated by hand and reproduced in a form of layering, provignage, to preserve this exceptional heritage from which the very exclusive cuvée Vieilles Vignes Françaises is made.
The famous quote from the founder:
I drink champagne when I'm happy and when I'm sad. Sometimes I drink from it when I am alone; and when I have company. When I am not hungry, I make myself hungry with it, and when I am hungry, I enjoy it. But otherwise I do not touch it, except when I am thirsty.
